| Crunchy Fruit Salad |
|
|
3 cups mixed salad greens
1 can (11 oz.) mandarin oranges, drained
1/2 cup fresh blueberries
20 sprays Wish-Bone® Salad Spritzers® Balsamic Breeze Vinaigrette™ Dressing
1/2 cup nutty granola cereal mix |

| On serving platter, arrange salad greens, then top with oranges and blueberries. Spritz with Wish-Bone® Salad Spritzers® Balsamic Breeze Vinaigrette™ Dressing, then sprinkle with granola. |

| Who said salad has to be savory? This salad reminds me of the time I went on two dates in one night. Blue Barry baked me breakfast, and I ordered takeout with the famous playwright M. Darin Orange. I couldn't decide who I liked best, so I decided to date them both! |

| Grilled Salmon with Citrus Salsa |
|
|
2 large navel oranges, peeled, sectioned and coarsely chopped
2 medium tomatoes, chopped
2/3 cup sliced green onions
1/4 cup chopped fresh cilantro
1/4 tsp. hot pepper sauce
4 salmon fillets (about 1-1/4 lbs.)
20 sprays I Can't Believe It's Not Butter!® Spray |

| In large bowl, combine oranges, tomatoes, green onions, cilantro and hot pepper sauce. Season, if desired, with salt and ground black pepper; set aside. Spray salmon with I Can't Believe It's Not Butter!® Spray and sprinkle, if desired, with salt and pepper to taste. Grill or broil salmon, turning once, 10 minutes or until salmon is opaque. Serve salsa with salmon. |

| This recipe reminds me of one of my first nights in the city. I went salsa dancing with this smooth-talkin’ salmon who was in the city on business. He was originally from Alaska, so he had never been to a dance club before. He wasn’t a great dancer, but he showed off some of his own moves. We had a blast! Once you taste this dish, you’ll see how well salmon and salsa go together! |
